Peanut Butter Choc Muffins
These were such a delicious fudgy, slightly sweet afternoon snack. I wanted something not too sweet, chocolatey and without any butter or oil. The bananas and peanut butter made them really fudgy. The cacao and choc chips make them choclately. And the cottage cheese and milk added some protein to make them a balanced snack.
I will definitely be making these again. I hope you enjoy them as much as I did.
Ingredients:
1 egg
2 bananas
2 tablespoons of cottage cheese
1/4 cup of milk
2 tablespoons of peanut butter
2 tablespoons of maple syrup
10 drops of monkfruit extract
4 tablespoons of cacao
6 tablespoons of buckwheat flour
1 teaspoon of baking powder
1/2 cup of choc chips
Method:
Preheat oven to 180 degrees Celsius, line or grease a muffin tin (will make 6-10 depending on size).
First add all wet ingredients into the bowl. Crack one egg into a mixing bowl and add 2 bananas, mis together. Add cottage cheese and milk and mix together well. Add peanut butter, maple, monkfruit and mix well.
Then add all dry ingredients into th bowl. Add cacao, flour, baking powder and mix well. Add choc chips. Spoon mixture into muffin tin and baking for 25-30 minutes depending on size.
Muffins are ready when there are slight cracks on top and when you pierce them with a knife it comes out clean.
